Fish Dish

Postby Stithian Sonck » Mon Nov 03, 2003 5:42 am

I see that you all have forgotten the best food of the world next to onions carrots. Fish is healthy, looks yummy and aways tasts good. Raw fish rocks, backed or cooked it doesn´t really matter it´s always good.

I am not a good cook, so this is mer a question to you, dear people who can cook and like to hang around on evernight.

I made this dish once, which has my three favorite ingredients which will be marked being bold. It is real simple and you can vary it.

Portugese Fish Dish

Ingredients
2 Onions
1 toe of garlic
20 gr of butter
4 Big Carrots
2-3 threads of saffraan
1 can pealed tomatoes
300-400gr fish (Best is salmon and whitebait. But you can add shrimps, cod.... whatever you have at home)
pepper and salt
150 gr blocks of cheese (best is dutch cheese)
3 eating spoons of brad crumbs
1 lemon
2 eating spoons of green olives.
3 Beers

Preparing the course
Open the beers
Heat the furnace to 175°C
Chop the onions and the garlic.
Heat the butter and back the threads of saffraan, the onions and the garlic.
Cut the pealed tomatoes and catch the juice that is left over. Put that in a greased furnace dish.
Mix half of the onion/garlic/saffraan mix with the juice of tomatoes in the furnace dish.
Put the fish in the furnace dish en sprinkle it with pepper and salt.
Mix the cutted tomatoes with the blocks of cheese, the other half of the onion/garlic/saffraan with the crumbs of bread and add some pepper and salt.
Divide this mixture over the furnace dish
Divide the carrot over the the furnace dish
Put this in the furnace and leave it there for ± 25 min.
Cut the lemon
And serve the fish dish with the lemon and olives
The beers should be empty by now

It is real good, especially those blocks of cheese. And I even I make it sometimes if I have the ingredients, cause eggs all the time is not everything. I have no clue what saffraan is in English, if someone knows can you add it in the thread?

If someone have another easy fish, carrot and onion dish or just a fish dish, tell me. :P
